If you've ever agonized over setting the table correctly, or been curious about any other aspect of formal dining, this book may be just what you're looking for. Suzanne von Drachenfels, a tabletop consultant with Fritz and Floyd for many years, accepted the huge task of compiling the many aspets of dining into this 592-page volume on the subject.

Written in an easy-to-read style, the book is arranged logically in nine parts, with a total of 53 chapters. Part I begins with "Dining Fundamentals" as the author defines words used in table setting, such as "cover," which is the space allotted the diner on which tableware is placed. Ms. Von Drachenfels proceeds to dinnerware, discussing pottery and porcelain, methods and styles of decoration, and the various types of ceramics and their characteristics, before moving on to specific pieces of dinnerware, such as her in-depth discussion of 12 plate sizes from service plate to fruit saucer.

Flatware, stemware, and table linens are also examined. The remaining sections VI through IX turn to explanation of Serving Techniques, Dining Finesse, Menu Plan, and Table Manners. After reading the advice given on manners, you'll be reminded of your mother's advice about talking with your mouth full-"It's offensive to see and makes conversation difficult to hear." Other advice is equally practical, such as how to refuse a beverage, what to do if you spill something, or what size portion to take from the serving platter. Ms. von Drachenfels also explains other customs for formal dining that the average person isn't likely to encounter, but are interesting reading anyway.

One of the more enjoyable aspects of the book is the historical references, such as the evolution of the use and shape of the knife over the centuries. Ms. Von Drachenfels has enlivened her book with appropriate quotes throughout such as this one in the discussion of knives: "I eat my peas with honey, I've done it all my life, It makes the peas taste funny, But it keeps them on the knife."

The Art of the Table is illustrated both with drawings by the author's daughter, Kelly Luscombe, and a section of full color photographs. A comprehensive index makes it easy to find specific topics.

This book not only instructs, but is entertaining as well. It is useful to anyone interested in knowing correct dining manners whether entertaining or being entertained.
